These delightful Keto Italian Pistachio Biscotti are a family favourite for us at Kraving Keto. They are best served with your favourite coffee and contain only 1g net carbs and 48 calories!
These delicious biscotti are sugar free, gluten free! A word of warning from us at Kraving Keto - you won't want to stop at one!

Preheat oven to 175C. Place all dry ingredients into a bowl and mix well
Add the egg and almond extract and using your hands, combine the mix until the dough has come together
Wet your hands and roll the dough into a 30 cm log and place on a lined tray
Bake for about 25-30 minutes until lightly browned.
Remove from oven and allow to cool
TIP: This step is important! If the log isn't cool, the biscotti may break as you slice them
Remove biscotti log from tray and place on a chopping board, slice log into 24 biscotti with a serrated knife
Place the cut biscotti flat back onto the tray and cook again for another 10 minutes. Once lightly golden, remove from the oven and allow to cool completely
Melt the chocolate in a small bowl and dip in the ends of the biscotti into the chocolate
Place on a tray and to allow the chocolate to harden. Enjoy a biscotti or two with your favourite coffee!
