These Keto Quesadillas will soon become a weekly meal on repeat, they are so delicious! Quesadillas are so versatile, they can be made with a variety of fillings (keto friendly of course) making them suitable for any meal or snack!

Makes 2 quesadillas or 4 tortillas

Preheat oven to 180 degrees celcius
Using an electric nutri-bullet (or similar) combine all ingredients into one of the smaller cups and blitz until combined
Once combined, allow the batter to sit for 5 minutes to thicken
While the batter is thickening, line two large baking trays with baking paper
Using a 1/4 measuring cup scoop out the batter and pour onto one of the baking trays
TIP: Using a measuring cup ensures all your tortillas will be roughly the same size
Using the back of a spoon spread out the mixture evenly into the shape of a circle
Repeat the previous 2 steps until you make all 4 tortillas
Place the baking trays into the oven for 5-10 minutes checking regularly until slightly browned
Once cooked, fill with your favourite fillings and use a pan or sandwich press to finish off your quesadilla!
Serve with your choice of keto-friendly toppings - you can't go wrong with pico de gallo, sour cream and avocado!
