
Valentine's Day Keto Red Velvet Cake
Deliciously moist, this cake is sugar and guilt free and comes together in no time. Topped with a creamy cheese frosting, it really takes the cake!

180 grams almond meal
1.5 teaspoons baking powder
half a teaspoon bicarb soda
1.5 tablespoons unsweetened cocoa
200 grams Lakanto Icing Sugar
2 tablespoons coconut oil, softened
120 grams plain greek yoghurt
3 large eggs at room temperature
2 teaspoons red food colouring
120 grams Lakanto Icing sugar
160 grams cream cheese
70 grams butter, softened
100 grams Vitawerx White Chocolate Coconut Rough

Pre heat oven 180 degrees. Place all dry ingredients into a bowl. Mix well, removing any lumps
In another bowl, combine all the wet ingredients with a whisk
Add wet ingredients to the dry ingredients and combine well.
Line a 20 cm tin with baking paper for easy removal. Pour cake batter into tin. Bake for 25-30 mins. Cake is baked when it springs back when touched in the middle.
In a mixing bowl add the softened butter, cream cheese and icing sugar. Beat until smooth and creamy
Once cake is cooled, cut in half and spread half the icing mixture on cake. Top it with the other half and spread the remaining icing on top of the cake.
To make the chocolate heart decoration melt 100 grams of Vitawerx Protein White Chocolate gently in a microwave. Stir well once melted and add a few drops of red gel food colouring
On a piece of baking paper spread chocolate using a palette knife, giving it a bit of thickness so it doesn't break. When chocolate is partially set, press a heart shape cutter into it and allow to set completely. Carefully peel chocolate off the paper and set aside.
Place your chocolate hearts into the cake, put some berries on top and sprinkle with chopped chocolate Keto Bites cookies. (We used chocolate chip but any flavour is great)
