Low Carb Mixed Berry Sugar Free Jam and Coconut Slice

70 grams melted butter
180 grams almond meal
1/2 cup Naturally Sweet Erythritol
20 grams coconut flour
1 teaspoon baking powder
100 grams sugar free dessicated coconut
40 grams Naturally Sweet Xylitol
100 grams Hawthorne Hill Mixed Berry Sugar Free Jam
To make the base
Preheat oven 180 C. Combine the dry ingredients in a bowl. Add in melted butter, stir then add the egg to bind the mixture.
Press into a 28 x 18 cm slice tin lined with baking paper. Bake in oven about 20-30 minutes or until lightly browned.
To make the coconut topping
Place desiccated coconut and xylitol in a bowl and combine. Add in eggs and mix well.
Spread mixed berry jam over slightly cooled base and spread the coconut topping evenly over the top of the jam.
Place slice into the oven again to cook the coconut topping for about 20 minutes or until lightly browned. Topping should brown lightly.
Once the slice has cooled remove from the baking tray, slice and enjoy!
