These mini berry cheesecakes are made Get Ya Yum On Rich Chocolate Coconut Slice as the base. Mum and I LOVE Get Ya Yum On products because they are so versatile and so quick and easy to prepare!
Enjoy as an afternoon snack or an after dinner treat, with only 4g net carbs per serve!
Prepare the mini cheesecake bases by adding the melted coconut oil to the Get Ya Yum On Rich Chocolate Coconut Slice mix. Stir to combine.
Divide evenly into a silicon muffin tray and press to create the mini cheesecake base.
Using an electric mixer, combine the cheesecake ingredients and beat until combined. Spoon evenly into the silicon muffin tray and bake in the oven for 12-15 mins.
TIP: While the cheesecakes are cooking, you can prepare the berry topping!
In a small saucepan combine the mixed berries and erythritol and cook for around 5 mins
Once the mini cheesecakes are cooked, let them cool before removing from the silicon muffin trays. Add the berry topping and enjoy!

Don't like berries? No worries, this recipe can be easily adapted to suit all taste buds! For mini chocolate peanut butter cheesecakes, add some peanut butter to the cheesecake mix and decorate with your favourite low carb chocolate, YUMMO!
