Quick and Easy Low Carb Pizza Base
Pizza is perfect for your Friday fake-away meal! If you're on a low carb or keto diet and you crave pizza then this quick and easy recipe is for you - it makes a delicious GOLDEN & CRISPY pizza base made with Lupins for Life Lupin flour!

Makes 1 pizza base (6 large slices)

Pre-heat oven to 200C
Place the mozzarella in a heatproof bowl and melt in the microwave in 30 second increments until fully melted, giving the mix a stir in between each increment. Once melted allow to cool for a minute or two
Add the lightly beaten egg and stir really well so it's fully incorporated
Add the lupin flour, almond meal and salt to taste
Mix using your hands and combine well.
Dough will be sticky. Place dough onto bench lightly dusted with semolina
TIP: Adding semolina to your bench will stop the dough from sticking
Flatten the dough to fit your pizza tray, pressing from the centre to the outer edge. Rotate the tray to make the spread of the dough as even as possible. Now poke the dough with a fork to allow air to escape
Your pizza base is now ready to bake. Place in preheated oven for about 15 minutes or until the base is browned
Remove from oven and top with your favourite toppings. Put pizza back in oven to cook your chosen toppings (~10 minutes). Eat and enjoy!!
